1/2 cup raw quinoa
1 small onion, chopped
1 teaspoons salt
1 baking potato, peeled and diced
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground oregano
1/2 teaspoon ground black pepper
2 cups vegetable broth
1 cup water
1 can diced tomatoes
1 yellow squash, diced
- Combine the above ingredients in your slow cooker and cook on low for 8 hours. Serve warm and enjoy!
