Meatless Meatball Subs

This simple recipe is fast becoming a go to favorite for soccer practice evenings when I need something super speedy.  I use store-bought meatless meatballs and store-bought bread.  I do use my own marinara sauce. 

4 crusty sandwich rolls
1 package Trader Joe's Meatless Meatballs
1 recipe My Veggie Table Marinara Sauce
8 slices provolone cheese
Parmesan cheese, grated
  1. Warm the meatless meatballs in the marinara sauce until the meatballs and sauce are warm. 
  2. Turn the oven to Broil
  3. Split open the sandwich rolls and lay out on a foil lined baking sheet.  Top the rolls with meatballs and sauce, and 2 slices of provolone cheese.  Sprinkle the top of the provolone cheese with Parmesan cheese. 
  4. Broil until the cheese is melted.  Serve warm and enjoy!
