3 large baking potatoes, scrubbed
3 tablespoons unsalted butter, melted
1/4 cup milk, warmed
2 tablespoons light sour cream
salt and pepper to taste
- Scrub the potatoes, place them in a large stock pot and cover them with cold water. Bring to a boil and boil the potatoes for 25 to 30 minutes or until they are tender.
- Drain, and return the potatoes to the pot. Mash with a potato masher until potateos and a mealy mass. Add the melted butter, milk, and sour cream and mash until well incorporated.
- Add salt and pepper to taste.
- Serve warm and enjoy!
