2 tablespoons olive oil
1/2 teaspoon sea salt
1/2 cup finely chopped white onion
1 1/2 cup medium grain white rice, rinsed and drained
2 1/4 cups vegetable broth
- Heat the oil in a medium sized saucepan over medium heat, add the onion and sea salt. Saute until the onion is soft, about 3-5 minutes. Then add the rice, and cook until the edges of the rice become translucent, about 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the saucepan and cook for 17 minutes or until all the moisture was absorbed.
- Remove the pot from the heat, fluff the rice with a fork and allow to sit for 10 minutes.
- Serve warm and enjoy!
