This recipe is perfect as a dressing for Falafel or as a dipping sauce for pita bread. Either way it is a cool and healthy treat. I decided with this recipe that I wanted some of the cucumber peel in the sauce, so I peeled on of the cucumbers and left the peeling on the other. With both cucumbers I included the seeds. I was afraid that the sauce would be too thick and I wanted some of the water that comes with the seeds.
2 large cucumbers
3/4 teaspoon sea salt
1 1/2 cups Greek yogurt
2 cloves of garlic, minced
fresh ground pepper to taste
- Peel only ONE of the cucumbers and then coarsely grate both cucumbers. Place them in a colander over a sink, sprinkle with the salt and allow to sit for about 5 minutes. Squeeze out some of the extra liquid and transfer to a medium sized bowl.
- Add the remaining ingredients, mix well and add the pepper to taste. Cover and chill. Serve cold.
