Vegan Miracle Whip

For all my miracle whip loving friends who are currently trying to live a vegan life style, check this out.  All the sweet of miracle whip with non of the eggs.  Enjoy!

6 ounces extra firm silken tofu
2 tablespoons apple cider vinegar
2 teaspoons dijon mustard
1/4 teaspoon salt
1 tablespoon honey or sugar or natural sweetener of choice
  1. Put all the ingredients in a blender.  Turn the machine on medium and blend for a minute or two. 
  2. Turn off the machine and scrape down the side of the container.  Turn the blender back on and let it run for a full 3 minutes.  Stop and scrape again, then run the blender for another 2 minutes.  Taste and add more salt it needed.
