Total Cheater Quesadillas

This recipe is lock, stock and barrel from the instruction manual that accompanied my quesadilla maker. My quesadilla maker is the Salton Santa Fe Quesadilla Maker and to be perfectly clear I getting nothing from Salton or anyone else for telling you about this product. In fact, I did not even buy it for myself. It was gift from my parents and initially I did not want it. Then I tired it and they are soooooo yummy. So there.

1/2 cup shreeded cheddar or Monterry Jack cheese
4 (10-inch) flour tortillas
1/2 cup chunky salsa
(okay here is where I diviate. They call for cilantro, but I HATE cilantro so I leave it out.)

  1. Sprinkle half of the cheese on two of the tortillas. Divide and evenly spread the salsa over the cheese. Sprinkle evenly with the remaining cheese. Cover with the remaining tortillas.
  2. Place on the preheated quesdilla maker one at a time. Close the lid and cook 3 to 4 minutes or until tortilla is lightly browned.
  3. Cut into triangles and serve with additional salsa, sour cream and maybe even guacamole.
  4. You will need to repeat the above several times because you will not believe how yummy these suckers are!
