For those who are vegan this is an amazing alternative to morgaging you home to purchase store bought vegannaise.  This recipe is simple and follows the basic principles of my Blender Mayonnaise.  It is great on sandwiches or in pasta salad. 

6 ounces extra firm silken tofu
2 tablespoons apple cider vinegar
2 teaspoons dijon mustard
1/4 teaspoon salt
  1. Put all the ingredients in a blender.  Turn the machine on medium and blend for a minute or two. 
  2. Turn off the machine and scrape down the side of the container.  Turn the blender back on and let it run for a full 3 minutes.  Stop and scrape again, then run the blender for another 2 minutes.  Taste and add more salt it needed.
