I threw this salad together in the hopes to getting the boys to eat some spinach, which I cleverly disguised behind some strawberries. My youngest loved it, but my oldest was not to be fooled.
1 tablespoons olive oil
3 tablespoons white wine vinegar
1 tablespoon honey
1 teaspoon poppy seeds
5 strawberries, sliced
1/4 cup almonds, quartered
1 pound baby spinach
- Combine the olive oil, white wine vinegar, honey and the poppy seeds together in a large bowl with a whisk. Add the spinach, the strawberries and the almonds and toss to combine.
