Savory Stove Top Toast and Stewed Tomatoes




As part of the Foodbuzz Tastemaster program I received a free sample of Nature's Pride Hearty Wheat Bread with Flax.  The following is the recipe that created using this product.  My intention was to make a simple, yet healthy non-heavy meal.  

4 slices Nature's Pride Hearty Wheat bread
2 tablespoons olive oil, divided
4 cloves of garlic, minced and divided
1/2 teaspoon sea salt
1 14.5 ounce can of no salt added organic diced tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/8 teaspoon ground pepper
  1. Warm one tablespoon of oil in a large skillet.  Add 2 cloves of garlic and salt, cook until fragrant, about 30 seconds.  Add the bread, turn frequently to insure that it does not burn and gets evenly coated with the olive oil/garlic mixture. Allow the bread to toast, when the desired degree of brownness is achieved remove the bread from the skillet and cut.  
  2. While you are toasting your bread, warm the other tablespoon of olive oil in a small saucepan.  Add the remaining garlic and cook until fragrant.  Add the diced tomatoes, basil, oregano, and ground pepper.  Bring to a gentle simmer and cook until the flavors are well incorporated.  
  3. Serve warm with the toasted bread and enjoy.

    And those circle fries from yesterday, I made some last night to go with dinner, they were a hit, thanks!!!
