8 average sized Yukon Gold potatoes, scrubbed and thinly sliced
4 tablespoons olive oil
2 teaspoons Lawry's seasoning salt
- Place the potatoes in a large microwave save bowl, add about a 1/4 cup of water and cover with plastic wrap. Microwave on high for 4-8 minutes or until the potatoes are lightly steamed.
- Preheat the oven to 475 degrees. While the oven is preheating, dry eat potato as best you can.
- Cover two baking sheets with heavy duty aluminum foil and pour 2 tablespoons of olive oil into each baking sheet. Place the sliced potatoes in a single layer on each sheet. Bake for 10 minutes, turn the potatoes an bake for an additional 10 minutes.
- Serve with the Feta Cheese Dressing/Dipping sauce
