Circle Fries

This is another recipe inspired by Shipfeifers, in Atlanta.  They served these delicious circle shaped french fries.  I have tried numerous times to recreate these only to have my attempts end in failure.  This time I got pretty close by using Yukon Gold potatoes. 

8 average sized Yukon Gold potatoes, scrubbed and thinly sliced
4 tablespoons olive oil
2 teaspoons Lawry's seasoning salt

  1. Place the potatoes in a large microwave save bowl, add about a 1/4 cup of water and cover with plastic wrap.  Microwave on high for 4-8 minutes or until the potatoes are lightly steamed. 
  2. Preheat the oven to 475 degrees.  While the oven is preheating, dry eat potato as best you can. 
  3. Cover two baking sheets with heavy duty aluminum foil and pour 2 tablespoons of olive oil into each baking sheet.  Place the sliced potatoes in a single layer on each sheet.  Bake for 10 minutes, turn the potatoes an bake for an additional 10 minutes. 
  4. Serve with the Feta Cheese Dressing/Dipping sauce
