Oven Roasted Cherry Tomatoes


This easy and delicious recipe is a great way to get more vegetables (or fruit:) into your family's diet. 

1 pint of cherry tomatoes, rinsed and dried
1 tablespoon olive oil
1 tablespoon balsamic vinegar
  1. Preheat the oven to 450 degrees and cover a cookie sheet with aluminum foil.  Toss the cherry tomatoes together with the oil and vinegar in a large bowl.  Place the tomatoes onto the cooking sheet in a single layer.  Roast for 10-15 minutes or until the tomatoes are charred and busting open. 
  2. Then try and not eat them all before you get to the table.  I dare you.
