1 pound spinach, washed
1 tablespoon olive oil
1 1/2 ounce sliced almonds
2 ounces golden raisins
1 teaspoon grated ginger root
pinch of salt
- Heat the olive oil over medium heat in a 12-inch skillet. Add the almonds, raisins, ginger and salt, stirring for 3 minutes or until the nuts are golden brown.
- Add the spinach and saute until wilted, stirring constantly.
- Serve immediately
