Sauteed Spinach with Almonds and Raisins

This recipe is adapted from the Little Guide to Vegetarian Cooking. This is a perfect side dish to any meal.

1 pound spinach, washed
1 tablespoon olive oil
1 1/2 ounce sliced almonds
2 ounces golden raisins
1 teaspoon grated ginger root
pinch of salt
  1. Heat the olive oil over medium heat in a 12-inch skillet. Add the almonds, raisins, ginger and salt, stirring for 3 minutes or until the nuts are golden brown.
  2. Add the spinach and saute until wilted, stirring constantly.
  3. Serve immediately
