Ranch and Cheddar Potato Skins

This recipe is for Foodbuzz Family Bites, sponsored by Hidden Valley Ranch. When I was chosen to participate in this program it was requested that I create three new family friendly recipes and only one of them had to include Hidden Valley Ranch products, but I just could not stop at only one. I admit to having a bit of a addict to ranch dressing and this was just what a ranch dressing addict dreams of. In the end I made five recipes containing Hidden Valley Ranch products and I could have just gone really crazy with it if I had the time! This is a take on classic potato skins. These are perfect for game day or any family gathering. Enjoy!

4 small and long baking potatoes
olive oil cooking spray
8 tablespoons Light Hidden Valley Ranch Bottled Dressing
8 ounces shredded extra sharp cheddar cheese
  1. Preheat the oven to 400°
  2. Bake the potatoes according to my directions for baking potatoes, found here. Allow the potatoes to cool down until you can easily touch them.
  3. Lower the oven to 350° and cover a baking sheet with parchment paper.
  4. Slice each potato lengthwise and scoop out the flesh leaving a 1/4 inch thick potato boat. Slice each potato boat in half width wise and place them on the baking sheet.
  5. Top each potato with 1/2 tablespoon of Light Hidden Valley Ranch Bottled Dressing and 1/2 ounce of shredded sharp cheddar cheese.
  6. Bake for 10 minutes until the cheese is melted. If desired, turn the over to broil and boil for 2-3 minutes or until the cheese is browned.
  7. Serve with plain light sour cream or light sour cream mixed with Hidden Valley Ranch Dressing Mix
