Quick Cucumber Salad

Yet another quick and easy Summer recipe. This goes great as a side dish or on sandwiches.

1 cucumber thinly sliced
1/2 of a medium sized red onion, chopped
1 tablespoon extra virgin olive oil
2 tablespoons red wine vinegar
salt, pepper and dried oregano to taste
  1. Toss the above together, chill for at least one hour before serving.
