This recipe is from The Joy of Cooking. I did make a few substitutions, but the basics of the recipe remains the same.
1 large egg, at room temperature
1 teaspoon salt
1 teaspoons sugar
1 1/4 cups extra virgin olive oil, divided
2 tablespoons white vinegar
- Combine the egg, salt, sugar and 1/4 cup of the oil in a blender. Cover and blend until thoroughly combined.
- With the blender running, slowly add 1/2 cup of oil, then add the vinegar, blend until thoroughly combined. Slowly add the last 1/2 of oil and blend until thickened. You will need to stop the blender and scrape the sides throughout the process.
