Tomato Olive and Feta Pasta

This is a super easy last minute pasta dinner. I literally made this up at 6pm on a Friday afternoon.

1 pound of your choice of pasta or a mixture of whatever you have left over
2 cans of diced tomatoes
1 small can sliced black olives
3-6 small leaves of fresh basil, shredded by hand
1 teaspoon dried oregano
salt and pepper to taste
2 tablespoons balsamic vinegar
1 tablespoon olive oil
6 ounces crumbled feta cheese

  1. Cook the pasta according to the package instructions.
  2. While pasta is cooking, drain the cans of tomatoes and olives in the same strainer. Add to this the fresh basil, and mix together in the strainer. When the pasta is done cooking strain it through the strainer containing the tomato, olive, and basil mixture.
  3. Return the pasta mixture to the pot and add the dried oregano, salt, pepper, balsamic vinegar, olive oil, and feta cheese. Mix together until well incorporated.
  4. Serve warm or cool, and enjoy!
