Ricotta Gnocchi with Sage Beurre Blanc



This recipe is from the Weight Watchers Healthy Cooking cookbook. This is probably the first recipe from this book that I have not had to make some heavy adjustments to. Kudos to them from getting one right.
1 (15 ounce) container of part skim milk ricotta cheese
1/2 cup whole wheat flour
3 tablespoons grated Parmesan cheese, divided
1/2 teaspoon salt
2 teaspoons olive oil
2 teaspoons butter
6 small sage leaves
1/4 cup dry white wine
1/4 cup vegetable broth
1 tablespoons fresh parsley
  1. Stir together the ricotta, flour, 2 tablespoons Parmesan and salt in a large bowl until a sticky dough forms.

  2. Scrape the dough onto a lightly floured surface; divide into 4 pieces and roll each piece into a 1/2 inch wide log. Cut each log into 1 inch pieces and place the gnocchi on a lightly floured baking sheet and cover with a damp paper towel.

  3. Heat the oil over medium high heat until it just begins to shimmer, add the butter and allow to melt. Once the butter and oil are combined, add the sage and cook until the sage is fragrant, about 2 minutes. Add the wine and broth; bring to a boil. Reduce the heat and simmer until the sauce begins to thicken, about 3 minutes.

  4. Meanwhile bring a large pot of water to a boil over medium heat. Add the gnocchi, in batches and cook until the gnocchi floats to the top of the water, no more than 2 minutes per batch. As each batch is cooked use a slotted spoon to transfer the gnocchi to the skillet of sage sauce. Cook, stirring often until all the gnocchi has been added. Remove the skillet from the heat and allow to sit for about 1 minute while the gnocchi absorbs some of the sauce.

  5. Serve with fresh parsley and the remaining Parmesan cheese.
