2-14.5 ounce cans of plain diced tomatoes
Juice of 1/2 lemon
1 cloves of garlic, minced
1/2 of a red onion, finely diced
2 tablespoons cider vinegar
1/2 teaspoon chili powder
1/2 teaspoon ground black pepper
1/4 teaspoon cumin powder
1/4 teaspoon ground sea salt
- Using a food processor pulse together the fresh tomatoes, canned tomatoes and the lemon juice until very nearly pureed. Place in a large mixing bowl and set aside
- Add the garlic, onion, vinegar and spices and mix until well combined.
- Refrigerate for at least 30 minutes before serving.
