Vegetable Soup

This is one easy soup. It is modified from the Weight Watchers Zero Point soup. For those on Weight Watchers it is still zero points. I just added some extra veggies.

3 cups vegetable broth
3 cups water
1-14.5 ounce can of diced tomatoes
1-14.5 ounce can of Italian Style diced tomatoes
2 cloves of garlic, minced
1 carrot diced
1 large zucchini, quartered and diced
1-2 yellow summer squash, quartered and diced
1/2 cup frozen peas or green beans
1/2 head of green cabbage, chopped to your desired size
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon onion powder
1/2 teaspoon kosher salt

  1. Basically, combine all the ingredients into a large stock pot, stir to until completely combined and bring to a simmer. Simmer for 15-20 minutes.
  2. Serve warm and enjoy!
