Smoky Baked Macaroni and Cheese

This was my husband's Christmas Day dinner. The macaroni and cheese in the the center. Recipes for the green beans and the mashed potatoes are already on the site. I was not completely pleased with how the rolls turned out. They need some work. I will post them only when they are ready!


12 oz large elbow macaroni
1/4 cup unsalted butter
1/4 cup all-purpose flour
3 cups milk
1 1/2 cup shredded cheddar cheese
1 cup shredded smoked Gouda cheese
1/2 cup shredded mozzarella cheese
1/4 teaspoon vegan Worcestershire sauce
1/2 teaspoon salt
Bread Crumbs, enough to cover casserole


  1. Move oven rack to the middle position and preheat oven to 350°. Cook the macaroni according to the package instructions.
  2. In a large sauce pan, melt the butter over a medium heat. Add the flour whisking constantly until well combined and the mixture begins to bubble. While still whisking the roux, gradually add the milk. Continue whisking constantly until the mixture comes to a boil. Then gradually stir in the cheeses, allowing each addition to melt before adding more. Then add the Worcestershire sauce and the salt, stir to combine.
  3. Remove from the heat and add the macaroni to the cheese mixture. Stir to thoroughly combine. Pour into a greased 2 qt baking dish and sprinkle with desire amount of bread crumbs.
  4. Bake for 30 to 40 minutes or until the top is golden brown and the cheese is bubbling.
