Caesar Salad-Not Vegetarian

This is the first recipe I have ever posted which is not a vegetarian recipe. This recipe contains Worcester Sauce which contains anchovies and unfortunately I could think of no substitute. My husband was alright with this, but I wanted to make certain that everyone else knew this fact.

Croutons
3 tablespoons olive oil
2 cloves of garlic, minced
1 teaspoon kosher salt
4 cups (1/2 inch) bread cubes

Salad
1 head romaine lettuce, washed, drained and torn into bite size pieces
2 tablespoons mayonnaise
1 tablespoon and 1 teaspoon fresh lemon juice
1 cloves of garlic, minced
1/2 teaspoon Worcestershire sauce
1/4 teaspoon prepared Dijon mustard
1/4 teaspoon coarsely ground black pepper
1/4 cup extra virgin olive oil
1 1/2 oz shredded Parmesan cheese

  1. For the croutons, adjust oven rack to the center position and preheat oven to 350°. Whisk the oil, garlic and salt together in a large bowl. Add the bread cubes and toss until thoroughly coated. Spread the bread onto a baking sheet and bake until golden brown, about 15 to 20 minutes. Allow to cool before serving.
  2. In a small mixing bowl, combine the mayonnaise, lemon juice, garlic, Worcestershire sauce, Dijon mustard, pepper and salt. Whisk in the oil. Pour the dressing over the lettuce and toss well. Add the croutons and cheese before serving.

  1. Looks great, and easy. I've been trying to make my own dressings so I'm going to give this a whirl.
