Chick Peas

This is the best way to make beans.  Sure I use more than may fair share of canned beans, but when time allows I make them from dry.  The only hitch here is that you have to soak the beans overnight.  I have in the past done a quick soak, but I find that the beans don't come out as tender when I do the quick soak. 

For the Soak
1 cup dried beans
enough water to cover the beans
1 teaspoon salt
1 tablespoon oil

For cooking
Soaked beans, drained and rinsed
enough water to cover the beans
1 teaspoon salt
  1. Soak the beans over night in the water, salt and oil.  The next day, drain and rinse the beans.
  2. Place the beans in a medium sized sauce pan, cover with water (about 1 inch over the beans), add 1 teaspoon salt and bring the mixture to a boil  Reduce the heat to a simmer and cook for 30 minutes.  At the 30 minutes mark, check the beans to see if they are done.  If they are not done, continue cooking them for 30 minutes, but check them again half way through the cooking time. 
  3. Serve warm or use in your favorite recipe. Enjoy!
