Balsamic Red Cabbage

This is a quick and easy way to make red cabbage.  It is reminescent of pickled cabbage with out the long cooking time.  The cabbage is picture above with my Horseradish Mashed Potatoes.

1 tablespoon olive oil
1 clove of garlic, minced
4 cups shredded red cabbage
1/2 cup balsamic vinegar
1 tablesoon white sugar
1/2 cup water
  1. Warm the oil in a large skillet, add the garlic and cook until fragrant, about 30 seconds.  Add the cabbage, balsamic vinegar, white sugar and water.  Cover with a lid and allow to simmer for 10 minutes or until the sauce it thickened.  The cabbage will still have a pretty good bite at this point, but that is how we like it.  If you wish to have your cabbage softer, then increase your cooking time. 
  2. Serve warm.
