3 cups uncooked bowtie pasta
1 can diced tomatoes, drained and rinsed
1/4 cup light balsamic vinegarette salad dressing
1/4 teaspoon ground black pepper
4 cups baby spinach
1 small red onion, thinly sliced
1 (14-ounce) can artichokes, rinsed, drained and quartered
- Cook and drain the pasta according to package directions. Rinse with cold water and drain again.
- While the pasta is cooking, place the tomatoes, salad dressing, and pepper in a small bowl. Whisk to combine.
- Toss the pasta, salad dressing mixture and the remaining ingredients until well combined.
- Serve cold
