Spinach Pasta Salad

This is the perfect recipe for a warm evening.  While you have to cook the pasta, you don't have to stand over it. 

3 cups uncooked bowtie pasta
1 can diced tomatoes, drained and rinsed
1/4 cup light balsamic vinegarette salad dressing
1/4 teaspoon ground black pepper
4 cups baby spinach
1 small red onion, thinly sliced
1 (14-ounce) can artichokes, rinsed, drained and quartered
  1. Cook and drain the pasta according to package directions.  Rinse with cold water and drain again.
  2. While the pasta is cooking, place the tomatoes, salad dressing,  and pepper in a small bowl.  Whisk to combine. 
  3. Toss the pasta, salad dressing mixture and the remaining ingredients until well combined. 
  4. Serve cold
