Smoked Gouda and Barely Salad

This recipe is absolutely perfect for a warm Summer evening.  We found that the move time it spend in the refrigerator the better is tasted, so I would suggest chilling it overnight. 

1/3 cup oil packed sun dried tomatoes, rinsed in warm water
2 cups cold cooked barley
3 ounces smoked Gouda cheese, shredded
1/3 cup reduced-fat mayonnaise
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1 small zucchini, coarsely chopped
  1. Combine the above ingredients in a large mixing bowl and refrigerate for at least 2 hours or overnight.
