A Day at the Beach

I have not posted anything all week and I wish it was because I had been at the beach.  Sadly, I was just dealing with a house full of sick people.  I guess I will just have to live vicariously through the above cocktail and pretend to be at the beach. 

Serves One

1 ounce coconut rum
1/2 ounce amaretto almond liqueur
4 ounces orange juice
1/2 ounce grenadine. 

1. Combine the rum, amaretto, and orange juice in a shaker filled with ice.  Shake until the shaker base is ice cold.  Pour into a ice filled high ball or other tall glass.  Add the grenadine and garnish as desired with a pineapple wedge or strawberry.
