Roasted Sweet Potatoes

This recipe is completely from my mind. Now, what I am calling a sweet potato is the orange fleshed variety which is often sold as a yam in the grocery store.

4 medium sized sweet potatoes, chopped in bite size pieces
1 tablespoon extra virgin olive oil
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1 pinch of cinnamon
1 small pinch of cayenne pepper
  1. Preheat the oven to 350° and grease a deep 9x13 inch baking pan.
  2. Toss the sweet potatoes with the olive and seasoning.
  3. Spread them in an even layer in the baking dish and bake for 30 to 40 minutes. You might want to begin checking on their progress after the first 30 minutes.

Serves 6: Calories 96, Fat grams 2, Fiber grams 3
