No-Bake Chocolate-Scotch Drops


This Friday I bring you a cookie recipe, just in time for those up coming Holiday Cookie exchanges. This recipe came to us on a very hot day. I had promised the boys they could have a cookie from the local cookie store if they were good at swim class. Well, they were good, but we ran out of time before our next appointment. I promised we would make cookies only to be stymied by a 100° day. After some searching I found a recipe for the above no-bake cookie. It was a little sweet for me, but the boys loved it.
1 cup semi-sweet chocolate morsels
1 cup butterscotch morsels
1 1/2 cups old fashioned Quaker oats, uncooked
1 cup chopped peanuts
  1. Place the chocolate and butterscotch morsels in a microwavable bowl. Microwave on HIGH for 30 second to 1 1/2 minutes or until mixture is melted and smooth, stirring every 30 seconds.
  2. Add the oats and the peanuts, mix well
  3. Drop by heaping teaspoonfuls onto waxed paper. Cover and refrigerate until firm. Store tightly covered in the refrigerator.

Calories are according to The Quaker Oat Company. Serving size 2 cookies. Calories 160, Fat 9 grams, Fiber 1 gram.
