Roasted Herb Potatoes

2 tablespoons olive oil
2 teaspoons dried rosemary
1 teaspoons dried thyme
1/4 teaspoons sea salt
1/8 teaspooon ground black pepper
1 small yellow onion, finely chopped
4 medium baking potatoes, washed, dried and cut into 1-inch pieces
  1. Move the oven rake to the upper middle position and preheat the oven to 450°. Grease a baking sheet with cooking spray and set aside.
  2. Mix first 5 ingredients in a large bowl with lid. Add the potatoes and shake until well coated. Spread the potatoes in a single layer on the prepared pan.
  3. Bake uncovered for 25 to 30 minutes or until golden brown.
