Mexican Rice

This recipe was made using one of the two free jars of Pace Picante Sauce that I received for participating in the Foodbuzz Tastemasters program.

2 teaspoon vegetable oil
1 garlic clove, minced
1 cup long grain rice
1/2 cup Pace Picante Sauce
3/4 cup tomato sauce
1 1/4 cup water
  1. Heat oil over medium heat in a saucepan until it shimmers. Add the garlic and cook until fragrant. Add the rice and cook until translucent, about 5 minutes. Add the Pace Picante Sauce and cook stirring constantly until the sauce is well absorbed. Do the same with the tomato sauce.
  2. Add the water and bring to a boil. Reduce heat to low, cover tightly and allow to simmer covered for 20 minutes.
  3. Stir before serving.
