Colby Jack and Stone Ground Mustard Grilled Cheese Sandwiches

8 slices of bread
8 slices of Colby jack cheese
2 teaspoons of stone ground mustard, per sandwich
Unsalted butter, melted

  1. Preheat your skillet, griddle or sandwich maker
  2. Brush one side of each slice of bread with the melted butter
  3. Brush the inside of each slice of bread with the mustard and build your sandwich with the cheese slices.
  4. Put the sandwiches together, butter side out.
  5. Cook each sandwich until the cheese is melted and the bread is toasted.
